How to make Vegan Cheese Sauce

This is not only a delicious alternative to heavy cream, or cheese sauce but also a healthier option, with only 4 ingredients!

If you’re new to the plant-based lifestyle, this sauce will make a good friend for life. It’s easy to make and only requires 4 ingredients, and is completely vegan!

Cashew Cream Reciepe

Ingredients

  • Unsalted Soaked Cashews (1 cup)
  • Nutritional Yeast (1/4 cup)
  • Lemon Juice ( 1 teaspoon)
  • Plant-milk or Water ( 1/2 cup)

Instructions

  • Mix all ingredients in a blender or food processor.
  • Blend until smooth and creamy
  • Store in fridge for up to 14 days, or use immediately

Tips

  • If you’re using a Food Processor, you’d want to soak the cashews in water for at least 4 hours. However if you’re using a good blender (Blendtec etc.) you do not have to soak them beforehand.
  • For a thicker sauce, use less water or plant-milk
  • For a creamer texture, make sure you blend for at least 2 minutes

Add Extra Flavor

Having used this recipe for various dishes, it’s very easy to add extra ingredients to make the cream tastier (Yes that is possible). Be careful with adding too much, but below are some ideas of what worked for me;

  • Garlic
  • Dried Tomatos
  • Dijon Mustard
  • Chipotle / or Chili
  • Use Chickpea water instead of plant-milk or water

For our own peace of mind, we took a look at the difference between Cheddar and Cashew sauce, and if you look at the nutrients, you’ll not only find it to be a healthier recipe as it contains fewer calories, less fat and 0 cholesterol, but it also isn’t from animals (who may or may not have steroids, antibiotics or hormones injected into them). So you can feel completely guilt-free with this recipe.
